Taking the time to plan your meals is one of the best ways you can prepare for a houseboat vacation. While it can be tempting to take the path of least resistance with hamburgers and hot dogs every night, it can get a bit repetitive. Pizza on the Grill

If you have never grilled pizza before, it’s high time you did. Preheat the gas BBQ grill on your houseboat and go for a hot, 550 degrees. We suggest you start with a prebaked pizza crust. Top your crust with sauce, cheese, and your favorite toppings – all of which can be sliced and portioned in advanced. Place the pizza on the grill, close the lid, and cook for 3 to 5 minutes. Now you’re ready to enjoy your pizza on top of your houseboat.

Olive Stuffed Pork Tenderloin

A step above a simple pork roast, this stuffed tenderloin is surprisingly simple. Prepare a 2- to 4-pound pork tenderloin in a brine of your choosing. A basic brine includes 2 cups of water, 2 tablespoons of salt, a clove or two of minced garlic and a tablespoon of peppercorns. The pork can be frozen in this brine then defrosted on the lake. Once defrosted, rinse the tenderloin and pat dry. 

Slice the tenderloin in half lengthwise, leaving about a quarter of an inch. Then do the same for each half, so you have four connected triangular strips of tenderloin. Smear olive tapenade in the valleys where you made the cuts. Roll the tenderloin back up and tie with butcher’s twine. Bake in a 450-degree oven until it reaches an internal temperature of 160 degrees, about 45 minutes.

Thai Red Curry with Jasmine Rice

Made entirely with non-perishable ingredients, this recipe requires no preparation except the packing. For the rice: bring 1 cup of rice and 1.5 cups of water to a boil. Reduce heat and simmer for 10 minutes. Let rest for 10 more minutes before serving. For the curry: heat a tablespoon of oil over medium heat. Add 1 teaspoon of red curry paste to the oil. When it starts to smoke, add 1 can each: sliced mushrooms, water chestnuts, bamboo shoots, and baby corn. Stir until well combined. Add 1 can of coconut milk and simmer for ten minutes. Serve with jasmine rice.
