Valentine Dinner For Two

Filet Mignon with a Balsamic Reduction

Perhaps the quintessential Valentine’s Day entrée, filet mignon is one of those dishes that takes minimal preparation and tastes remarkably wonderful. Start with two tenderloin steaks and rub a little salt, pepper, and sugar onto them. Heat a skillet over medium-high heat and then sear both steaks, about a minute per side. Once they’re seared, drop the heat to medium-low. Add a pat of butter and one-quarter cup each of red wine and balsamic vinegar to the pan. While you’re cooking, use a spoon to baste the steaks for another 4 to 6 minutes depending on your preference.

Herb-Roasted Red Potatoes

Roasted potatoes are versatile, simple, and pair perfectly with steak. Preheat your over to 400 degrees. Start with ¾ lbs of red potatoes then clean and slice them in half. Toss the potatoes with one tablespoon of olive oil, ½ tablespoon of Herbes de Provence, preferably a blend with lavender, ½ teaspoon of salt and a dash of black pepper. Then pop it in the oven to bake for 25-30 minutes.

Chocolate Fondue for Two

While there are plenty of ways to make fondue complicated, this is an easy recipe with lots of variations to delight your palate. Place 1 cup of your favorite chocolate chips and ¼ cup of heavy cream into a microwave-safe bowl. Microwave for 90 seconds then stir. Microwave for another 30 seconds and stir. Continue heating in 30 seconds increments, stirring after each time, until it is fully melted. Then dip anything you want into the chocolate. Fruit, marshmallows, cookies, even potato chips all make great fondue dippers.
