Vacation Rental With Boat | Delicious Recipes

If you have never cooked on a houseboat before, meal planning for a vacation rental with a boat might seem a little overwhelming. The truth is no one should be intimidated about cooking on a houseboat. We love simple and convenient meals because they leave more time for swimming, exploring, and relaxing. Here are two of our favorite easy and delicious recipes that you can prepare on your houseboat vacation.

Italian Chicken & Vegetable Kabobs

Take time before you leave your house to prepare your meals as much as possible. Marinating the chicken and vegetables in advance infuses them with flavor, helps them stay juicy when grilled, and is also really convenient. Cut chicken into cubes, roughly one to two inches, and put them in a zip top bag with enough Italian dressing to coat. Chop onions, bell peppers, zucchini, and summer squash into slices, about half an inch thick and place in a separate bag with enough Italian dressing to cover all of the vegetables. Before you leave the house though, don’t forget to grab a few kabob sticks on your way out. When you are ready to cook, make chicken skewers and vegetable skewers then throw on the grill. Cook until the chicken juices run clear, probably about fifteen minutes, turning every three to five minutes.    
Ingredients

Serves 4
1.5 pounds of Chicken Breasts
1 green bell pepper
1 red bell pepper
1 white onion
1 small zucchini
1 medium summer squash
Wooden Skewers (soak skewers in water for 30 minutes before use)
 

Mushroom Cheese Burgers

Take your burgers to the next level by adding flavorful ingredients and prepping patties in advance; when making burgers, you can expect one pound of ground beef to yield four generous burgers or eight sliders. This recipe calls for one pound of ground beef but can be doubled or tripled for bigger groups. In a large bowl, mix together one pound of ground beef, four ounces of shredded mozzarella cheese, one chopped portabella mushroom cap, one chopped onion, one shredded carrot, and two cloves of minced garlic. Form individual burger patties, if they are not coming together you can add one egg to the mixture to help it bind together. Place patties in a single layer on a baking sheet lined with parchment paper. Freeze. Once frozen, these patties can be placed together in a zip top bag. To cook, place frozen or thawed patties on the grill and cooked to desired temperature. For an easy side, grill ears of corn in their husks alongside the burgers.

1 white onion
1 carrot
2 cloves of garlic (minced)
1 egg (if needed)
Parchment Paper

Optional: 4 Ears of Corn
